Kimchi research with HAIP BlackIndustry VNIR V2

Our distributor wonwoosystems has recently successfully installed our latest hyperspectral camera product release in the national kimchi research facility in Korea.


Kimchi is a traditional Korean dish made from fermented vegetables, primarily napa cabbage and radishes, seasoned with a mix of salt, chili peppers, garlic, ginger, and other spices. It’s a staple in Korean cuisine and culture, cherished for its unique taste, nutritional value, and the variety of flavors it offers.


Main activities at the World Institute of Kimchi include microbial functional research and new process fermentation research. As a fermented food, kimchi is rich in vitamins, minerals, and beneficial bacteria (probiotics) that support gut health. It’s low in calories and high in fiber, making it a nutritious addition to meals.
